Salmon is a tasty and very healthy fish rich in omega-3 fatty acids, minerals, protein and vitamins. It is very versatile and can be eaten raw, cooked or smoked. This recipe (serves one) will definitely surprise you!
1 salmon fillet/3-4 tablespoons salt/3-4 tablespoons sugar/1 small spoonful of juniper berries/Pink peppercorns/Lemon slices
Rinse salmon in cold running water and pat dry delicately. Transfer into a deep dish and spread first the juniper berries and then a mix of the same quantity of sugar and salt. Cover and leave to marinate in the fridge for 2 ½ to 3 days. Rinse and pat dry, then slice like smoked salmon. Decorate with pink pepper and lemon slices and serve with a nice summer salad and fresh bread. Don’t forget a glass of prosecco or dry champagne. Delicious!
